“Donburi” means “big bowl” in Japanese, referring to a meal of rice or noodles with various ingredients and seasonings served in a large bowl. Popular in everyday Japanese life, donburi dishes are flavorful, easy toprepare, and can be enjoyed as both a casual lunch and a fancy dinner. In this class, you’ll learn to make three donburi dishes: a tofu and mushroom oyako donburi, a vegetable with ankake sauce donburi, and a soy ginger tempeh donburi. We’ll also prepare nutritious Japanese multigrain rice to accompany our meals. Donburi bowls are versatile, so you can adapt the recipes with your favorite ingredients. Note: A $20 food fee is included in the tuition. Course code: F358-W25. Course tuition $89.
Instructor: Yoko Bryden is a food consultant and highly experienced cooking instructor with over a decade of expertise. Yoko collaborates with corporate clients, primarily in Japan, providing services such as recipe development, food trend analysis, market research, and global cuisine education.Her courses at NCE provide unique perspectives on Japanese cuisine, from vegan ramen to izakaya menus to miso-making. Yoko is also the founder of Hungry Ninja, a business known for its innovative Japanese vegan salads. Yoko also leads curated gastronomy tours to Japan, offering an immersive and authentic exploration of the country’s rich culinary heritage via travel to less explored regions of the country.
